Salsa


Mmm, one of the best things about summer is definitely fresh produce. Unfortunately, due to the salmonella findings in tomatoes and a few other veggies, fresh produce isn't as abundant this year.

Luckily there are several dishes I know of that still taste great even with canned veggies. One of these is my mom's salsa. It's a really basic recipe that is very quick to make. It takes me about 15 mins to make it.


The basics are:
2 cans Bush's Black beans (we like this brand for the saltiness)
1 can corn
1 can diced tomatoes (with these, fresh is really better, but use what you can find)
Fresh cilantro, chopped
Lime juice (1 lime usually works well)

Mix everything together.

You can put a little sour cream or plain yogurt on it for an extra kick.
I like to eat it with corn chips, but you could just eat it with a spoon for a sort of gazpacho effect.


The combination of cilantro and lime really makes this. It reminds me of Chipotle. Mmmm.

The finished product...with waaay too much yogurt on it!
